This is a great nutrition packed healthy salad that’s so easy to prepare and keeps reasonably fresh for up to 24-hrs. Cannellini Bean and Tuna Salad is a perfect snack solution for busy people.

Ingredients

  • Tinned Tuna- 200gm

  • Tinned Cannellini Beans- 400gm

  • Red Onion- 1-small

  • Dry roast Peanut- 50gm

  • Black Pepper Course-1/4tsp

  • Olive Oil- 1tbsp

  • Baby Spinach- 50gm

  • Salt- 1/4tsp

Directions

  • Open and strain the water from the Tuna and Cannellini tins.
  • Dice the red Onion into small pieces.
  • Place the prepared items into bowl, add the pepper and Olive Oil and gently mix with a spoon to blend.
  • Add the Peanut and Spinach but don’t mix it in till you are ready to eat or pack for take away. Add salt to taste.
