  • Topside Beef- 1 kg

  • Butter- 1 tbsp

  • Course Pepper 1/2-tsp

  • Dark Soya Sauce 1-tsp

  • English Mustard 1/2-tsp

  • Dried Mixed Herb 1/2-tsp

  • Beef stock 1-cube

  • Hot Water 2-tbsp

  • Salt 1-tsp

  • Small Onion sliced

  • Veg Oil 1-tbsp

  • Plain Flout 1-tbsp

Preparation

If the Beef is coming out of the fridge and is rolled and tied with string, undo the string and flatten the rolled meat and set aside in ambient temperature for 1-hour.

Add all the ingredients to a bowl except the flour and Onion and mix it to a paste as marinade for your best roast beef recipe.

Rub half of the prepared paste to the flatted beef and then add some of the sliced onion on top before rolling back and tying the beef.

Add the flour to the remaining paste and mix it in. Rub in the finished paste all over the rolled beef and then let it sit in the fridge for 30-minutes.

Heat a pan, add the Oil and wait for it to get hot. Place the rolled beef into the pan and keep turning it slowly for 3-minutes till all sides are lightly browned.

Remove the meat from the pan and place it in a snug fitting tray ready for the oven. Throw the sliced Onion into the pan and stir for 1-minute before adding it to the Beef tray.

Place tray in the oven and cook on gas mark 5, (170c for fan assisted oven and 190c for other type).

Bring out from the oven after cooking for 20-minutes and baste the meat with some oil and return to oven to complete the cooking.

Once cooked, remove meat and cover with foil and let it rest for 15-minutes. This will ensure meat is nice and moist when serving. Keep the tray aside as this will be needed for making the gravy.

Save all the fat and liquid from the tray into cup and let it settle so that the fat separates from the liquid. Scoop of a spoon or two of the separated fat and add it back into the tray and discard the rest of the liquid.

Place the tray under a low heat and then add 1-table spoon of plain flour, 1-beef stock cube and scrape the tray for any meat stuck on it and continue stirring. Add 500-ml hot water to tray bring it to boil and then add gravy granules of your choice till you get thick consistency.

Remove the foil and pour a few spoons of gravy onto the beef, slice and serve with your favourite veg.
