Ingredients

  • Step-1 / Prepare
  • Chicken thigh on the bone-1kg (8pcs-skin on), thaw in ambient temperature for an hour.

  • Onion-2 sliced

  • Button Mushroom-200gm-(use whole)

  • Carrot-3-sliced

  • Potato-2-(each cut into 4-6 pcs)

  • Thyme-1tsp or small pinch-(dried or fresh)

  • Olive Oil-2-tbs

  • Paprika-1-tsp

  • Ground black Pepper-1-tsp

  • Chicken Stock-2 cubes dissolved in 750ml hot water

  • Plain flour-3-tbs

  • Salt-1/2-tbs

  • Butter-1-tbs (melted)

Preparation

  • Ensure Chicken is kept in ambient temperature for an hour before marinating with Pepper, Paprika, Salt and melted Butter to make the best chicken casserole dish ever. Prepare stock using two pieces of Chicken cubes and adding 750ml hot water.
  • Heat a large pan and add the Oil when the pan is hot. Allow Oil to become hot and then lightly dust the Chicken using half the flour and then place it skin down in to the pan. Cook on medium heat for 10-minutes turning once and lowering heat a little once turned. Remove Chicken from pan and set aside for later.
  • Using the same pan without draining the excess Oil, add the Onion, Mushroom, Carrot and Potato over a medium heat for 5-minutes to brown and stir occasionally to avoid sticking to pan.
  • Transfer the quick fried veg from the pan to an oven safe pot or dish, add the remaining flour, Paprika, Salt, thyme and place the Chicken on top skin side up. Pour in the stock stirring gently between the gaps to allow the juice in. Place the pot over a low flame and allow it to heat gently for 5-minutes without reaching boiling point.
  • Preheat the Oven, set temperature to 190c or 170c-fan / gas mark 5 and place the pot in the oven with the lid on and cook for 1hr/15min. Bring out after 45-minutes of cooking to ensure there is no sticking and if so add a little hot water and stir gently without disturbing Chicken and place back in Oven to complete cooking. Cook without the lid for the last 5-minutes.
  • Remove from oven and allow it to rest for 5-minutes. Serve with your favourite Veg, Boiled sweet Potato, Bread, Rice or Couscous.
